Lemon Meringue Pie
Lemon Meringue Pie is an moderately easy dinner. Made with 1 c. water or milk, 3/4 c. sugar, 1/4 tsp. salt, 1 tsp. grated sunkist lemon peel and 5 tbsp. cornstarch, blended with 1/2 c. cold water, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Bring to a boil in saucepan on direct heat the water or milk, sugar, salt and lemon peel; add cornstarch.
Cook over low heat until thickened, about 5 minutes, stirring constantly.
Remove from heat.
Add egg yolks, butter and lemon juice separately, mixing well each time.
Pour into an 8-inch baked or crumb crust pie shell.
Top with meringue; brown.
