Lemon Icebox Pie
Lemon Icebox Pie is an moderately easy dinner. Made with 1 can condensed milk, 2 egg yolks, 2 egg whites, 1/2 c. lemon juice and 2 c. vanilla wafers, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Mix milk, lemon juice and rind.
Stir until thick.
Add beaten egg yolks. Mix melted shortening with vanilla wafer crumbs and press firmly into pan.
Pour filling into pan and top with meringue.
Beat 2 egg whites very stiff.
Add 2 tablespoons of sugar.
Blend well.
Spread on pie. Place in oven until brown. Let cool and chill in refrigerator.
