Lemon Ice
Lemon Ice is an easy dinner. Made with 3 1/2 c. water, 1 1/4 c. sugar, 3/4 c. fresh lemon juice, 2 tbsp. lemon zest and 6 fresh mint sprigs, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Boil the water in a saucepan; stir in sugar until dissolved. Remove from heat and cool.
Add lemon juice and zest.
Pour mixture into a metal bowl and freeze.
When ready to serve, beat the ice until fluffy and scoop into lemon or lime "shells" or serve in small glass bowls or wine glasses.
Top with mint sprigs.
