Mix persimmon pulp and with soda and set aside. In large bowl lightly beat egg, sugar, oil and dates. Combine dry ingredients.

Add to date mixture alternately with persimmon pulp just until well blended.

Stir in nuts.

Spread on greased and floured jelly roll pan.

Bake at 350Β° about 25 minutes until lightly browned.

Pan about 5 minutes, then spread with Lemon Glaze.

Cool thoroughly.

Cut in bars 3 x 1 1/2-inches. Keep well wrapped.

Makes 30 bars.

(Raisins can be used, giving different flavor.)
