Heat the olive oil in a wok or large skillet.
Add the bell pepper and zucchini.
Stir-fry for 3 minutes.
Add the shrimp, garlic and scallions.
Stir-fry over high heat for a few more minutes.
Add the snow peas.
Stir-fry until the shrimp begin to curl.
Add the lemon juice and zest.
Stir-fry until the shrimp turn pink.
Remove to a serving platter using a slotted spoon. Season with salt and pepper.
Sprinkle with parsley and chives. Serve with orzo, rice or noodles.
