Lasagna Roll-Ups
Lasagna Roll-Ups is an moderately easy dinner. Made with 8 oz. lasagna noodles, 16 oz. ricotta cheese, 2 eggs, beaten, 1 (10 oz.) frozen spinach and 2 c. shredded mozzarella cheese, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Cook lasagna noodles, drain and set aside.
Thaw and squeeze dry spinach.
In a medium bowl, blend Ricotta cheese, eggs, spinach and Mozzarella cheese; spread evenly on lasagna strips. Cut strips in half crosswise.
Roll strips up jelly-roll style. Cut each roll in half.
In a 15 x 10-inch baking dish (or two 8 or 9-inch baking dishes).
Arrange roll-ups curled edges up; lay 3/4 sauce in pan and then spinach roll-ups.
Add Parmesan cheese and rest of sauce.
Cover with foil.
Bake in a 350Β° oven until hot, 35 to 40 minutes.
