Lamb, Red Beans And Tomatoes is an moderately easy dinner. Mix together the onion, parsley and garlic.
Cut cooked lamb into small pieces.
Brown meat in small amount of oil or in its own fat.
Add onion mixture and saute 5 minutes.
Add tomatoes, chili powder and salt (if needed); stir in beans.
Simmer about 20 minutes.
Very good with cornbread.
Serves 4.
