Kathy's Zucchini Relish
Kathy'S Zucchini Relish is an moderately easy dinner. Made with 3 c. sugar, 5 tbsp. salt, 2 tbsp. cornstarch, 3 tsp. turmeric and 2 tsp. celery seed, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Combine zucchini, onion and salt; let set overnight.
Drain and rinse well.
Place in large pot along with remaining ingredients.
