Jubilee Chocolate Cake
Jubilee Chocolate Cake is an moderately easy dinner. Made with 3/4 tsp. baking soda, 1 c. buttermilk or sour milk *, 1 1/2 c. unsifted cake flour or 1 1/4 c. sifted all-purpose flour, 1 c. sugar and 1/2 c. unsweetened cocoa, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Stir baking soda into buttermilk or sour milk until dissolved. Combine flour, 1 cup sugar, cocoa and salt in large mixer bowl. Add oil, buttermilk or sour milk mixture and egg yolks; beat until smooth.
Beat egg whites in small mixer bowl until foamy; gradually add 1/2 cup sugar, beating until very stiff peaks form. Gently fold egg whites into chocolate batter.
Pour into greased and floured 13 x 9 x 2-inch oblong pan.
Bake at 350Β° for 30 to 35 minutes or until cake springs back when lightly touched in center. Cool in pan on wire rack.
