Josephinas is an moderately easy dinner. Made with 4 oz. green chiles, diced, 1/4 lb. butter, softened to room temperature, 1 c. mayonnaise, 1/2 lb. monterey jack cheese, grated and 2 loaves french bread (small diameter), this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
In a medium-sized bowl, mix the chiles, butter, mayonnaise and cheese until well blended.
Slice the French bread into thin slices and spread amply with the cheese mixture, making sure to completely cover the bread.
Place the bread slices on an ungreased cookie sheet in a preheated broiler and broil about 5 to 10 minutes until the spread is bubbly.
Serve on a large serving plate garnished with parsley sprigs.
