John's Black-Eyed Peas
John'S Black-Eyed Peas is an easy dinner. Made with 1/2 lb. slab bacon, 1 c. long grain rice, 2 qt. water, 1/2 c. coconut, shredded (optional) and 2 c. black-eyed peas, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Cook bacon in water for 30 minutes, then add peas and rice. Simmer until peas are soft.
Then add coconut and simmer on lowest heat for 15 minutes.
Lift out bacon and slice.
Drain peas and rice and pop into the oven for a few minutes to dry until rice is fluffy.
Serve with bacon sliced on top.
(You can fry the bacon until crispy and cut into 1-inch lengths.)
