Japanese Fruit Pie
Japanese Fruit Pie is an moderately easy dinner. Made with 1/2 c. soft margarine, 2 eggs, 1 c. sugar, 2 tbsp. flour and 1 tsp. vanilla, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Beat the eggs, then combine the margarine, eggs, sugar, flour and vanilla.
Mix well.
Pour 2 cups boiling water over 1/2 to 3/4 cup raisins; let set 5 minutes and drain.
Add the coarsely chopped pecans, coconut and drained raisins.
Pour into unbaked pie shell and bake at 425Β° for 20 to 25 minutes.
Let cool and serve with Cool Whip.
