Jane's Zucchini Bread
Jane'S Zucchini Bread is an moderately easy dinner. Made with 2 c. grated zucchini, 3 tsp. vanilla, 1 c. vegetable oil, 1 1/2 c. sugar (white) and 1 c. chopped nuts, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Preheat oven to 350Β°.
In a small bowl, combine flour, soda, baking powder, cinnamon, nutmeg and salt.
Stir to blend thoroughly.
Break eggs into mixer bowl; beat well.
Add vanilla, then oil, then sugar.
Add zucchini and mix well.
Add flour mixture slowly and blend well.
Mix in nuts.
Divide batter into three 1 1/3-cup loaf pans.
Bake for 50 minutes.
