Jalapeño Pepper Potatoes
Jalapeño Pepper Potatoes is an easy dinner. Made with 8 large potatoes, 2 c. shredded sharp cheddar cheese, 3/4 c. mayonnaise (fat-free will work), 1/4 c. jalapeños or chili peppers and salt and pepper, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Peel and cube potatoes.
Boil until just done and drain.
In large mixing bowl, mix potatoes, shredded cheese, mayonnaise and peppers.
Use just enough mayonnaise to make mixture thick (not creamy).
Spoon into oblong baking dish (spray with Pam).
Cook at 350° for 45 minutes until golden brown on top.
