Italian Zucchini Soup
Italian Zucchini Soup is an moderately easy dinner. Made with 1 lb. italian sausage, 1 c. chopped onion, 2 c. chopped celery, 1 medium green pepper, chopped and 2 tbsp. sugar, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

In a Dutch oven, brown sausage with onion; drain excess fat. Add the celery, green pepper, sugar, salt, basil, oregano, pepper and tomatoes.
Cover and simmer 1/2 hour.
Add zucchini; simmer 1/2 hour or more.
Sprinkle with Parmesan cheese, if desired. Yield: 2 quarts.
