Italian Zucchini
Italian Zucchini is an moderately easy dinner. Made with 3 medium zucchini (about 2 lb.), 1/4 c. olive or salad oil, 1 1/2 c. chopped onion, 1 1/2 tsp. salt and 1/4 tsp. garlic salt, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.
Cut ends from zucchini, then cut in lengthwise slices, then cut slices in half and in thirds (crosswise).
Place cut side down in hot oil in large skillet.
Add onion.
Cook until side of zucchini is lightly browned.
Sprinkle with seasoning.
Top with tomatoes; cover and cook over medium heat until squash is tender and juice forms a fairly thick sauce.
