Italian Beef is an moderately easy dinner. Made with 4 lb. rump roast, 2 tbsp. oregano, 2 bay leaves, 3 tbsp. vinegar and 4 tsp. caraway seed, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Put meat in Dutch oven; add rest of ingredients on top, except peppers and 2 cups water.
Cover and cook 2 hours over low flame, turning occasionally.
Take meat out and cool; slice thin.
Remove garlic and bay leaves.
Add the sliced green peppers and 2 cups water.
Simmer for 1/2 hour.
Put meat in and simmer another 1/2 hour.
