Island Style Chicken
Island Style Chicken is an moderately easy dinner. Made with 1 (8 oz.) can pineapple chunks, 2 lb. chicken parts, 2 tbsp. shortening, 1 can chicken broth and 1/4 c. vinegar, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Drain pineapple; reserve syrup.
In skillet, brown chicken in shortening; pour off fat.
Add reserved syrup, broth, vinegar, sugar, soy sauce and garlic.
Cover and cook over low heat 40 minutes.
Add green pepper and pineapple; cook 5 minutes or until done.
Combine cornstarch and water; gradually stir into sauce. Cook, stirring until thickened.
Serve with cooked parsleyed rice.
