Impossible Zucchini Tomato Pie is an moderately easy dinner. Made with 2 c. chopped zucchini, 1 c. chopped tomato (i like italian tomato), 1/2 c. chopped onion, 1/3 c. grated parmesan cheese and 1 1/2 c. milk, this recipe delivers authentic, satisfying flavors. Heat oven to 400Β°.
Grease a 10-inch quiche dish or pie plate 1 1/2 inches deep.
Sprinkle zucchini, tomato, onion and cheese into the pie plate.
Beat remaining ingredients until smooth, about 15 seconds in a blender on high or for about 1 minute with mixer.
Pour into pie plate.
Bake until a knife inserted in the center comes out clean, about 30 minutes.
Cool 5 minutes before slicing.
