Iced Green Tomato Pickles
Iced Green Tomato Pickles is an moderately easy dinner. Made with 7 lb. sliced green tomatoes, 2 gal. cold water, 3 c. garden lime, 1 tsp. salt and 5 lb. sugar, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Soak thickly sliced tomatoes in lime water (thoroughly dissolve powdered lime in cold water) for 24 hours.
Drain and soak 4 hours in clear cold water, changing water every hour. Drain.
Place in kettle the vinegar, sugar and spices. Bring to a rolling boil and pour over tomatoes. Let stand overnight.
In the morning, boil 1 hour and seal in containers.
Use crock or large bowl for soaking.
