Blend 1 cup flour with sugar. Cut in butter until mixture is crumbly. Add ice cream and blend well.

Mixture may firm up because of the ice cream; if so, blend with wooden spoon or electric mixer to form dough.

Wrap in plastic wrap and refrigerate overnight.

With remaining tablespoon of flour, lightly flour board. Remove half of the dough from refrigerator. Roll to 1/4-inch thick. Cut into 3-inch rounds.

Make a fingerprint in center and place a teaspoon of jam.

Bake at 350Β° on ungreased cookie sheet 8 to 10 minutes.
