Hungarian Country Breakfast
Hungarian Country Breakfast is an moderately easy dinner. Made with 1/2 lb. bacon, cut into 1-inch pieces, 1 large onion, quartered and sliced, 1 1/2 tsp. paprika (maybe a little more later), 5 or 6 medium potatoes, sliced and 1 1/2 tsp. salt, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Fry bacon pieces.
Save about 1/3 cup drippings after removing bacon.
Add salt, pepper and paprika to onion.
Saute in drippings until tender.
Add potatoes and stir gently with onion.
Add 1 cup water and simmer on medium heat until potatoes are tender.
Add bacon and mix gently.
Simmer a little longer.
You may need to add another 1/4 cup of water.
This can be served alone or with eggs.
