Hot Shrimp Toast
Hot Shrimp Toast is an moderately easy dinner. Made with 1 lb. shrimp (fresh or frozen), 1 (5 oz.) can water chestnuts, drained, 1/4 c. chopped green onions (tops only), 2 tsp. salt and 1 tsp. sugar, this recipe delivers authentic, satisfying flavors. Grind together to a paste with finest blade of meat grinder or blend in blender first three ingredients.
Add salt, sugar and beaten egg.
Spread mixture on thin sliced white bread.
Sprinkle lightly with fine dry bread crumbs.
Cut each slice in 4 triangles.
Heat 1-inch of oil in skillet; fry triangles, shrimp side down first, then brown other side.
Drain on paper towels. Freeze.
When ready to serve, defrost and reheat in 400Β° oven for 5 minutes.
