Hot Pole Bean-Potato Salad is an moderately easy dinner. Made with 1 lb. new potatoes, peeled and cut into 3/4 inch cubes, 1 lb. fresh green beans, cut in 1-1/2 inch pieces, or frozen cut green beans, 6 slices crisp bacon, 1/2 c. finely chopped onion and 1/4 c. mayonnaise or salad dressing, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Cook potatoes and beans, covered, in boiling salted water in a large pan until tender; drain vegetables.
Fry bacon until crisp; remove from skillet and drain, reserving 2 tablespoons drippings in pan.
Saute onion in drippings; stir into vegetables.
Combine remaining ingredients and pour over vegetables, stirring well.
