Drain all but 2 tablespoons of fat.

Add green pepper and cook until tender-crisp.

Stir in water, vinegar, sugar, cornstarch and seasonings.

Simmer, uncovered, until thickened.

Gently stir in potatoes, crumbled bacon and 1/2 can of onions.

Spoon into 1 1/2-quart casserole. Bake, covered, 35 minutes or until thoroughly heated.

Top with remaining onions.

Bake, uncovered, 3 minutes, until golden brown. Makes 4 servings.
