Hospitality Chicken Soup
Hospitality Chicken Soup is an moderately easy dinner. Made with 5 to 7 lb. chicken, cut up and cleaned (keep skin on!), 1 large onion, scored, 1/2 bunch parsley, 1/2 bunch dill and 1/2 parsley root (optional), this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

After cleaning chicken, put in a 6-quart pot filled with 4 to 5 quarts of water.
Let it come to a boil and skim off scum (the discolored foam that rises to the top).
When soup looks clear, add all other ingredients.
Let it come to a boil, then lower. Cover with venting and let simmer until chicken falls off the bone.
Strain and serve.
