Homemade Vegetable Soup is an impressive dinner. Made with 3 to 4 lb. beef soup bone (with meat), 2 qt. cold water, 1 small onion, quartered, 1 tsp. salt and 2 c. fresh or canned tomatoes, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Cut half the meat from bone and brown in hot fat.
Add remaining meat and bone to cold water.
Add browned meat, onion and salt; cook slowly for 2 hours.
Add vegetables and rice or barley.
Continue cooking for 1 hour.
