Homemade Ice Cream
Homemade Ice Cream is an moderately easy dinner. Made with 2 c. sugar, 3 or 4 tbsp. cocoa, 3 or 4 eggs, 3/4 gallon milk and 1 can evaporated milk, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Beat sugar, cocoa and eggs until foaming.
Heat milk and canned milk until lukewarm.
Meanwhile, dissolve junkets tablets in a tablespoon of warm water and set aside.
Stir the egg mixture into the milk and then pour into a 1-gallon freezer.
Then add your junkets and a little vanilla.
Stir lightly.
Let stand until mixture jells.
This will take about 15 to 20 minutes.
Start freezer.
Use ice and rock salt.
(If it does not start to freeze, you are not using enough salt.)
