Holiday Soup
Holiday Soup is an moderately easy dinner. Made with turkey carcass, 2 stalks celery, chopped (about 3 c.), 1 large onion, 1/2 medium head cabbage and leftover turkey broth, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Cook turkey carcass, skin and etc. and skim the fat off the broth.
Place in large kettle and add all the vegetables and rice. Simmer until vegetables are cooked and flavors blended.
You can add additional bouillon and salt and pepper to taste.
A very good way to use up leftover turkey and very good at the holiday season.
