Remove skins from potatoes; shred into bowl.
Saute onion in 1/4 cup melted butter until tender.
Remove from heat and stir in soup, cheese and sour cream.
Add potatoes and toss until coated with soup/cream mixture.
Drizzle with 3 tablespoons butter and bake in greased 13 x 9 x 2-inch baking dish in 350Β° oven for one hour.
Garnish with pimento and parsley.
