Heat oven to 425°.

Combine seasoning ingredients; press evenly into roast.

Place on rack in a shallow pan.

Roast approximately 45 to 50 minutes for medium rare to medium doneness. Remove roast when meat thermometer registers 140° for medium-rare or 155° for medium.

Sprinkle with cheese.

Let stand 15 minutes. Slice and season with salt.
