Gumdrop Cake
Gumdrop Cake is an impressive dinner. Made with 1 c. shortening (room temperature), 1 c. sugar, 1 c. brown sugar, 4 eggs, beaten and 2 c. applesauce, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

In a large bowl, combine shortening and sugars; beat until creamy.
Add eggs and beat until well combined.
Mix applesauce and soda and add to mixture.
Beat until well combined.
In another bowl, combine 1/2 cup flour with gumdrops, dates, nuts and raisins. Stir thoroughly until all ingredients are dusted with flour.
Set aside.
In another bowl, combine remaining 3 1/2 cups flour with cinnamon, nutmeg, allspice and salt.
Add to egg and sugar mixture; beat until smooth.
Stir in gumdrop mixture and vanilla.
Line 3 loaf pans with wax paper and distribute batter evenly.
Bake at 300Β° about 2 hours.
Cool on wire rack.
Remove from pan and peel off wax paper.
Wrap tightly in plastic wrap.
Cake is best stored for a week or two before serving.
