Green Tomato Pickles
Green Tomato Pickles is an moderately easy dinner. Made with 4 qt. tomatoes, 1/2 gal. onions, 1/2 gal. green peppers (some hot), 1/2 gal. vinegar and 5 c. sugar, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Cut tomatoes and onions (tomatoes in quarters and slice onions).
Sprinkle 1 cup salt over this and let stand 1/2 day. Heat mixture of vinegar, sugar and bag of spices.
Drain onions and tomatoes.
Add onions, tomatoes and peppers to hot mixture and cook until tomatoes change color, about 10 minutes.
Do not cook until tomatoes are soggy.
Pack in jars and seal.
Use hot pepper according to how hot you like.
