Green Gazpacho
Green Gazpacho is an moderately easy dinner. Made with 1 c. green grapes, 1 ripe avocado, 3/4 c. peeled, chopped cucumber, 1/2 c. chopped green bell pepper and 1/2 c. chopped celery, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Purée fruit and vegetables in small batches in a food processor, adding white grape juice as necessary to keep the blade from clogging.
Do not purée completely; the gazpacho should be chunky.
Transfer the mixture to a bowl; add the remaining grape juice, lime juice, chopped mint, salt and white pepper to taste. Cover and chill at least 4 hours.
