Green Beans Greek Style
Green Beans Greek Style is an moderately easy dinner. Made with 1 1/2 to 2 lb. fresh green beans, 1 (28 oz.) can whole tomatoes or 2 to 3 fresh tomatoes, 1 medium onion, coarsely chopped, salt and water, this recipe delivers authentic, satisfying flavors. Snap beans.
Place in heavy bottom pan.
Grate tomatoes over top of beans.
Place onion over tomatoes.
Salt to taste.
Add water carefully down side of pan to within 1 1/2-inches of top of beans.
Cover and bring to rapid boil.
Boil hard without stirring just until no or very little water remains and beans are tender.
Dress lightly with olive oil and toss.
Best served lukewarm or cold.
