Greek Squash
Greek Squash is an moderately easy dinner. Made with 4 c. yellow squash, 4 slices torn bread, 1/2 c. milk, 1/2 c. parmesan cheese and 2 eggs, beaten, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Cook squash until tender in slightly salted boiling water. Drain and mash.
Mix torn bread, milk, cheese and beaten egg well.
Stir in squash.
Use 1/2 stick margarine to dot bottom of casserole dish.
Pour in squash mixture.
Dot with remaining margarine.
Sprinkle with paprika.
Bake at 375Β° for 35 to 40 minutes.
