Greek Chicken Salad
Greek Chicken Salad is an moderately easy dinner. Made with 3 c. cubed, cooked chicken, 2 medium cucumbers, peeled, seeded and chopped (about 2 1/2 c.), 1 1/4 c. crumbled feta cheese (5 oz.), 2/3 c. sliced pitted ripe olives and 1/4 c. snipped parsley, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

In a large mixing bowl, combine chicken, cucumber, Feta cheese, olives and parsley; set aside.
For dressing, in a small mixing bowl, stir together Aioli or mayonnaise and garlic mixture, yogurt and oregano.
Add to the chicken mixture.
Toss mixture gently until coated.
Cover and chill.
Serve on Boston lettuce leaves.
