Grandma's Tea Cakes
Grandma'S Tea Cakes is an moderately easy dinner. Made with 1 c. shortening, 3 eggs, 2 tsp. baking powder, 1/2 tsp. salt and 1 or 1 1/4 tsp. almond extract, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Cream shortening in a large bowl.
Gradually add 1 1/2 cups sugar.
Beating well at medium speed on an electric mixer, add eggs, one at a time.
Beating after each, combine flour, baking powder, baking soda and salt.
Add to creamed mixture alternately with buttermilk.
Mix well and stir in extract.
Cover and chill for 1 hour.
Roll dough int 1/4-inch thickness on a floured surface.
Cut with a 2 1/2-inch round cookie cutter.
Place on a greased cookie sheet and bake at 350Β° for 15 minutes or until edges begin to brown.
Sprinkle with sugar if desired.
Cool. Yields 4 dozen.
