"Grandma's" Carrot Cookies
"Grandma'S" Carrot Cookies is an moderately easy dinner. Made with 2 c. diced, peeled carrots, 3/4 c. butter or margarine, 1 c. sugar, 1 egg and 1 tsp. vanilla, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Cook carrots in small amount of boiling, salted water until tender; drain and mash.
Cream butter and sugar.
Add egg and vanilla; beat until fluffy.
Stir in mashed carrots.
Stir together flour, baking powder and salt; blend into batter.
Drop from teaspoon on ungreased cookie sheet.
Bake at 375Β° about 12 minutes.
Cool; ice.
