Golden Lemon Marmalade
Golden Lemon Marmalade is an moderately easy dinner. Made with 1 lb. carrots, grated, 2 medium lemons, seeded and grated, 3 3/4 c. sugar, 1/2 tsp. salt and 1/2 c. water, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Put carrots, lemon, sugar, salt and water in a large kettle and bring to a boil.
Cook over medium heat for 10 -15 minutes. Add mint and cook 5 minutes more.
Pour into hot sterilized jelly glasses and seal at once.
Really good stuff not only is this good on muffins or biscuits but makes a great glaze on pork or lamb chops.
