German Potato Salad
German Potato Salad is an moderately easy dinner. Made with 10 medium sized new potatoes (boiled in jackets), 10 slices bacon, fried crisp and crumbled, 1/4 c. bacon drippings, 1 medium onion, diced and 3/4 c. each: vinegar, sugar and water, this recipe delivers authentic, satisfying flavors. Peel and slice potatoes.
Add bacon, celery seed, salt and pepper.
Set aside.
Saute onions in bacon drippings until clear. Add flour and mix well.
Add vinegar, sugar and water, stirring until mixture thickens slightly.
Pour over potatoes.
Stir well. Best if allowed to sit 1/2 hour.
