German Potato Salad is an moderately easy dinner. Made with 2 lb. potatoes, 3/4 c. hot beef stock, 1/2 c. finely chopped onion, 1/4 c. apple cider vinegar and 1/4 c. oil, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Boil potatoes with skins until tender.
Peel while hot and allow to cool only enough to slice about 1/8-inch thick.
Add oil, salt, pepper, onion and vinegar.
Pour hot beef stock over potatoes.
Mix gently together in order to not break up potatoes. Let set at room temperature for at least 1 hour.
Mix again just before serving.
Garnish with chopped green onion tops.
