German Potato Salad
German Potato Salad is an moderately easy dinner. Made with 5 lb. potatoes, 1/4 c. vinegar, dash of salt, 2 onions, chopped and 1/2 lb. bacon, cut in 1/4-inch pieces, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Boil potatoes until tender in salted water.
Drain and cube. In large skillet, fry bacon and onions until cooked (reserve onions and bacon).
Add vinegar, sugar, white pepper and 1 cup water to the fat in skillet.
Cook until the mixture reduces by 1/3 in volume.
Add potatoes to the mixture in skillet; cook until all are warm.
If there is too much vinegar flavor, you may add water to dilute. Toss potatoes with all ingredients.
Serve warm. Feel free to adjust flavors to taste, with salt and pepper.
