German Potato Salad
German Potato Salad is an moderately easy dinner. Made with 3 lb. potatoes, peeled, boiled and cut up, 1 lb. bacon, 2 to 3 medium chopped onions, 4 tbsp. flour and 1 tbsp. sugar, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.
Early in the morning, boil 6 to 8 medium-sized potatoes until just done.
Allow to cool until lukewarm, then peel and slice into a wide bowl (do not pile high).
Top with one very finely chopped medium-size Spanish onion.
Pour just enough boiling water over the onions to moisten the potatoes slightly.
Add salt, pepper, nutmeg, lemon juice and vinegar (tarragon) according to taste. Mix in 3 to 4 tablespoons Mazola oil.
