German Potato Salad
German Potato Salad is an moderately easy dinner. Made with 6 medium potatoes (about 2 lb.), 6 bacon slices, 1 medium onion, chopped (1/2 c.), 1 1/2 tbsp. flour and 2 tbsp. sugar, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Cook potatoes in boiling water in a large saucepan just until tender, about 20 minutes.
Drain, peel and slice into a large bowl. Cover.
Cook bacon in a large skillet until crisp.
Drain on paper towel.
Pour off drippings; measure 1/4 cup and return to skillet.
Saute onion in drippings until soft.
Stir in flour, sugar, salt, pepper, vinegar and water. Cook, stirring constantly, until mixture is thickened.
Pour over potatoes. Toss lightly to coat.
Crumble bacon and sprinkle over top.
Serve warm.
