Gazpacho
Gazpacho is an moderately easy dinner. Made with 4 large, very ripe tomatoes, seeded and diced, 1 large cucumber, peeled, seeded and small diced, 1 medium onion, finely diced, 1 c. tomato (or v-8 juice) and 1 tbsp. wine vinegar, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Mix the tomatoes, cucumber, onion, green pepper, tomato juice, vinegar,
Oil and garlic; add salt and pepper to taste. PurΓ©e if desired.
Until cold.
