Garlic Pork Roast
Garlic Pork Roast is an moderately easy dinner. Made with 1 pork loin roast, backbone loosened (approximately 5 lb.), 1/2 large green pepper, chopped fine, 1/2 c. thinly sliced green onions, 1/2 c. chopped celery and 8 garlic cloves, minced, this recipe delivers authentic, satisfying flavors. With sharp knife, cut deep pocket between each rib on meaty side of roast.
Combine green pepper, green onion, celery and garlic.
Season roast with salt and cayenne pepper, then stuff garlic mixture into pockets cut in roast; pack firmly.
Place roast rib side down in shallow pan.
Bake, uncovered, at 325° for 3 hours or until meat thermometer reads 170°.
(Thermometer should be inserted before roast is put in oven if one is used.)
Let stand 15 minutes before carving.
