Garlic and Potato Soup
Garlic And Potato Soup is an moderately easy dinner. Made with 1 small cooking onion, chopped, 4 c. stock (chicken bouillon), 1 lb. potatoes, peeled and cubed, 4 cloves garlic, minced and 1/4 lb. chopped bacon, this recipe delivers authentic, satisfying flavors. In 3-quart saucepan, brown bacon until crisp, remove and drain on paper towel.
Reserve 2 to 3 tablespoons bacon fat.
Saute onion in bacon fat.
Add garlic and saute.
Add stock, potatoes and cayenne pepper and bring to a boil.
Reduce heat to simmer until potatoes are tender (about 15 minutes).
With a potato masher, crush potatoes to achieve a creamy consistency.
Salt and pepper to taste.
Serve with chives and bacon sprinkled on top.
