Funnel Cake
Funnel Cake is an moderately easy dinner. Made with 2 beaten eggs, 1 1/2 c. milk, 2 c. flour, 1 tsp. baking powder and 1/2 tsp. salt, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

In mixing bowl, combine eggs and milk.
Sift together flour, baking powder and salt.
Add to egg mixture.
Beat smooth with mixer on low speed.
Heat vegetable oil in deep fryer to 360Β°. Traditional methods of cooking: Pour batter in funnel holding thumb over end of funnel.
Swirl batter in hot oil and fry about 3 minutes until golden brown; turn and cook one minute more.
Modern method of cooking: Pour batter into a teapot with a narrow spout.
Swirl batter in oil and cook as above.
Drain on paper towels and sprinkle with powdered sugar, if desired.
