Fruit and Oat Bran Muffins
Fruit And Oat Bran Muffins is an impressive dinner. Made with 1 1/4 c. whole wheat flour, 1 c. oat bran, 1/3 c. packed brown sugar, 2 1/2 tsp. baking powder and 1/4 tsp. baking soda, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
In medium bowl, stir together all dry ingredients and spices. Set aside.
In a small bowl, combine buttermilk, egg whites and oil.
Add to dry ingredients; stir just until moistened.
Stir in fruit; mix and add raisins.
To bake, spray muffin cups with nonstick spray coating.
Spoon about 1/4 cup batter into each muffin cup.
Bake at 375Β° for 18 to 20 minutes.
Makes 12 muffins. These muffins freeze well.
